A Great Pick Me Up On A Cold Winter Day: Mom’s French Onion Soup
This recipe for French Onion Soup is near to my heart. My mother made this often and we all felt it was the best French Onion soup ever! I think of my mom whenever I make this! It is a great pick me up on a cold winter’s day.
French Onion Soup
Ingredients
• 4 Tbsp organic butter
• 2 medium or large onions (one white, one red)
• 1 Tbsp whole wheat or gluten free flour
• 1/8 tsp dry mustard
• ½ medium apple sliced very thin
• 2 cans low sodium beef broth
• French bread or whole grain bread cut into 1 inch cubes, sprinkled with garlic powder and toasted. (Or you can use packaged croutons)
• 4 round slices of provolone cheese.
Step 1 – Saute’ onions and sliced apple in butter in large skillet until golden and tender. Sprinkle in flour and mustard.
Step 2 – Add broth, bring to boil, then reduce heat and simmer for 2 hours, stirring occasionally.
Step 3 – Ladle soup into small to medium size oven safe bowls.
Step 4 – Put crotons on top, then top with provolone cheese.
Step 5 – Broil until cheese is bubbling.
Don’t forget your mitt when removing your soup from the oven! Enjoy!
Baking tip: If Provolone is sliced thin, you may want to add 2 slices to each bowl. I like to serve this with a salad or warm bread.
