What To Do With All Those Zucchini ???!!!
All that effort we put into gardening is paying off and there is abundance of produce! What to do with all the zucchini?
Here are some great recipes for Zucchini you will love!
Alfredo With Zucchini Noodles and Grilled Chicken
Ingredients:
½ cup of Ghee (instead of butter)
2 tbsp Neuchatel’ ( 30% less fat than cream cheese)
Pint ½ and ½ or Almond milk
2 TBSP mince garlic
1 pinch each fresh ground sea salt and black pepper
2/3 cup grated Parmesan cheese
3 cups spiralized Zucchini noodles
2 cups chopped chicken
Directions:
Add oil to large pan and cook chicken until no longer pink inside. Remove chicken to plate and cover.
Add 2 tablespoons oil to same pan and saute’ noodles approximately 4 to5 minutes, stirring frequently.
While Zucchini noodles are cooking make Alfredo sauce as follows:
In Medium sauce pan melt Ghee or butter over medium heat.
Add Neuchatel’ and mix until melted smoothly.
Stir in ½ and ½
Add garlic, salt, and pepper.
Bring to simmer and stir frequently.
Remove from heat and add Parmesan cheese.
Place Zucchini noodles on plate and add Alfredo sauce.
Top with cooked chicken
Sprinkle with more Parmesan if desired..
I also like to sprinkle with chopped Basil and serve with my Caesar salad.
