Healthier Garlic Alfredo Sauce

 

Here is a mouthwatering healthier version of Garlic Alfredo Sauce that will keep you coming back for more. I love Alfredo sauce , but am watching the cholesterol. I made this for my husband and I and we loved it! It is lower in cholesterol and still delicious!

Garlic Alfredo Sauce

Ingredients

  • 1/2 cup ghee (instead of butter) It is clarified butter.
  • 2 TBSP Neufchatel’ (30 % less fat than regular cream cheese)
  • 1pint ½ and ½ ( instead of heavy cream)
  • 1 to 2 tsp garlic powder or minced garlic.
  • Pinch of fresh ground sea salt and black pepper
  • 2/3 cup fresh grated Parmesan cheese.

Directions

  1. In medium sauce pan melt butter over medium heat.
  2. Add the Neufchatel’ and mix until melted smoothly.
  3. Stir in ½ and ½.
  4. Add garlic, salt and ground pepper.
  5. Bring to simmer for approximately 20 minutes and stir frequently, until sauce thickens.
  6. Remove from heat and stir in Parmesan cheese.
  7. Add to cooked whole grain or spinach pasta of your choice.

I usually add grilled chicken or shrimp and sprinkle with Basil leaves or Parsley and serve with my Caesar salad.
