Healthier Lasagna Recipe

We love this recipe at our house! It is a heathier version of traditional lasagna because I use whole grain Lasagna noodles, low fat Ricotta cheese, fresh chopped spinach, and organic Spaghetti sauce. I prefer the texture of the whole grain noodles over the white flour noodles and it’s so much better for you!

Ingredients

1 box whole grain lasagna noodles
1 large jar of spaghetti sauce
4 TBSP extra virgin olive oil
½ cup chopped onion (optional)
2 cups chopped spinach.
1 bag low fat mozzarella cheese (2 cups)
1 15 oz container low fat Ricotta (or cottage cheese)
1 # grass fed ground beef or venison
Salt and pepper to taste.

Prep Instructions

Heat oven to 375 degrees F.
Spray a 9 x 13 pan with cooking spray.
In a large saute’ pan, brown ground beef with chopped onion and salt and pepper.
Add chopped spinach last 2 minutes of cooking.
Add spaghetti sauce. Simmer for 2 more minutes.
Pour 1 cup of cooked sauce mixture into bottom of 9 x 13 in pan. Cover with Lasagna noodles and another layer of sauce mixture then Ricotta, then Mozzarella.
Repeat 2 more times ending with Mozzarella .

Cooking Instructions

Cover with foil and bake for 30 minutes. Then uncover and bake for 10 more minutes.
Let rest 15 minutes before serving.

Pro Tip: I like to serve this with my Caesar salad which you can find on page 37 of my cookbook “My Favorite Recipes Made Healthier”.
Enjoy!!
