Pasta Jar Salad

This is a great healthy make ahead salad for busy people on the go, or anyone at all.  I love it because I can prepare it the night before, grab it as I’m going out the door, and put it in a lunch cooler to enjoy on my lunch break.

Ingredients:

1 small red onion chopped.

½ can chickpeas, or any type of beans you chose, rinsed

1 cup grape tomatoes chopped.

1 ½ cups arugula

2 TBSP Feta cheese

2 TBSP red wine vinegar

1 ½ TBSP Olive oil

1 small can black olives

1 cup of cooked pasta of choice

Pinch of sea salt and black pepper.

In a large Mason jar, combine onion, vinegar, oil, Salt, and pepper. Add chickpeas or beans. Gently shake to coat.

Top with tomatoes, olives, pasta, arugula, and Feta.

When ready to eat, turn upside down and eat.

Makes about 2 jars.

You may substitute any dressing of choice for the Red Wine Vinegar and Olive oil if you wish, or substitute any vegetables.
