Mouth Watering Banana Bread
Warning! You will want to eat the entire loaf of this healthier throwback recipe
One of my favorite Christmas memories is the baking my grandmother always did during the holidays. She had six children and twenty-plus grandchildren to provide gifts for. So, because of being on a fixed income she chose the option of baking our Christmas presents, which I loved!
Every year she would bake a large box of cookies for each family. In that box would also be a loaf of homemade bread, and banana nut bread. I couldn’t wait to get that call to come and pick up our box of Christmas cookies on Christmas Eve! Needless to say, my grandma was an excellent baker!
Because I really love banana nut bread, I have changed a few ingredients to make it healthier! Usually, I use coconut oil instead of butter for a healthier option. You might also use Stevia in place of sugar using a 1/3 cup of Stevia to 1 cup of sugar ratio if you are diabetic.
Ingredients:
- ½ cup solid coconut oil
- ½ cup cane sugar
- 1 1/3 cup organic wheat flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 ½ cups mashed banana
- ½ cup walnuts (chopped)
Prep Instructions:
- Preheat oven to 350F degrees. Grease 9×13 loaf pan.
- Cream together sugar and shortening. Then, add eggs and beat well.
- Mash banana with 1/2 tsp of baking soda and add to above mixture.
- Sift dry ingredients and add to mixture. Blend well, before stirring in nuts.
Baking Instructions:
Pour into greased loaf pan and bake at 350F degrees for 50 minutes, or until toothpick inserted in center comes out clean.
Pro-Tip: This recipe is great served with coffee in the morning for breakfast!

Because I come from a family of bakers and good cooks. I love delicious food! Which, can often make things tough. So, I decided to compile some of my favorite recipes and make a few changes to the ingredients, ultimately making them healthier!
